Lean Tacos
Ingredients

Large ice gem lettuce or taco shells

Quorn mince, turkey mince or lean 5% mince beef

4 salad tomatoes

Handful of coriander

Lemon Juice

2 medium sized avocados

1 onions
-
Salt and Pepper

Taco seasoning mix sachet

Kidney beans

2 peppers
Method

First make your guacamole by halving and removing the stone from each avocado.

Put the avocado in a bowl and mash with the back of a folk until smooth

Add a pinch of salt and pepper. Then 2 tbsp of lemon juice and give it a mix. Season to taste, so if you like a tangy flavour, add a bit more lemon juice.

Now make your salsa by finely chopping 1 onion, a handful of coriander and 4 salad tomatoes.

Put in a bowl and add a pinch of salt and pepper. Now add 2 tbsp of lemon juice and give it a mix.

To make the taco filler, warm 1 tbsp of extra virgin olive oil in a frying pan. Add 1 chopped onion and salute for 2 minutes

Add your choice of meat or quorn in a frying pan on a high heat - depending on what you use follow the following instructions for cooking: Lean mince beef (25-30 mins), turkey mince (8- 10 mins) or quorn frozen or chilled (10 minutes).

When the meat or quorn is almost cooked, add taco seasoning mix sachet, kidney beans and chopped peppers

Drain any excess liquid with a colander if required. This gets rid of any fats that have separated from the meat.

Put back in the pan and set aside to be served.

Place the taco filling in a single ice gem lettuce leaf or taco shell. Then add the salsa and guacamole on top and eat.
