Juicy Chicken Tray Bake
Ingredients

2 Chicken Breasts

3 Medium sized sweet Potatoes

Half a broccoli, cut into smaller pieces

2 red onions, cut into wedges

8 garlic cloves, unpeeled

2 tbsp lemon juice
-
2 tsp smoked paprika
-
150ml chicken stock
-
2 tsp dried thyme
-
1 tsp dried rosemary
-
2 ½ tbsp olive oil

2 Chicken breasts cut into quarters
Method

Preheat the oven at 200 degrees/ Gas mark 6. In a large deep oven proof tray add the chopped sweet potatoes, quartered onions, chopped broccoli and 8 garlic cloves (unpeeled).

Scatter 2 tsp of thyme and 1 tsp rosemary over the veg with 1 and a half tbsp of extra virgin olive oil. Then stir everything together so that everything is evenly covered in the oil. Spread the vegetables across the tray evenly and place in the oven for 15 minutes.

Now take the tray out of the oven and give it a shake.

Put the chicken pieces in a bowl. Add 1 tsp of paprika, 1 tbsp olive oil and 1 tbsp of lemon juice. Mix together.

Then add the chicken pieces to the tray, sprinkling 1 tsp paprika and 1 tbsp of lemon juice over the vegetables and chicken. Place in the oven for a further 15 minutes.

Pour the chicken stock over the chicken, keeping a little bit for later. Put the tray back in the oven for a further 15 minutes.

Take the tray out of the oven and pour the rest of the stock over the chicken and place in the oven for another 5 minutes.

Now peal the garlic cloves and check the chicken is cooked throughout before serving.
