Falafel Burger
Ingredients

1 wholemeal bread roll

1 pot of low fat Houmous

Sweet chilli sauce
-
Tomatoes

Your favourite salad leaves (I like ice gem lettuce, rocket or spinach)

400g can of chickpeas

1 medium-sized red onion

1 garlic clove
-
1 handful of dried parsley
-
1 tsp ground cumin
-
1⁄2 tsp of chilli powder

2 tbsp plain flour
-
2 tbsp extra virgin olive oil
You will also require a hand blender or food processor for this recipe
Method

Drain the chickpeas using a sieve. Lay kitchen paper on a plate and empty the chickpeas on top. Pat dry with more kitchen paper.

Tip into a mixing bowl (if you are using a hand blender) or a food processor.

Add 1 medium-sized red onion (chopped)

Add 1 garlic clove (chopped or crushed)

Add a handful of dried parsley

Add 1 tsp ground cumin

Add ½ tsp chilli powder

Add 2 tbsp plain flour
-
Add a pinch of salt
-
Blend the mixture until it is smooth

Roll into patties with your hands and place on a plate

Heat 2 tbsp extra virgin olive oil in a frying pan

Place falafel patties into the pan and fry until golden on each side

Lay out a wholemeal roll and place on the falafel patties, hummus, sweet chilli sauce, salad leaves and tomatoes.
