Chickpea Fritters
Ingredients

1 can chickpeas

1/2 cup of oat or almond milk

1/2 cup of self raising flour

2 eggs
-
Spring onions
-
1 grated courgette
-
1 clove of garlic

Ginger spice

Salt and pepper
You will require a food processor or hand blender.
Method

Rinse and drain the chickpeas and add to a mixing bowl or food processor

Add 1 grated courgette with garlic, ginger, flour and spring onions to the bowl/ process or and blend. Do not over blend, keep the mixture a bit chunky.

Pour the mixture into a bowl and stir in 2 beaten eggs, milk and the flour.

Using your hands, shape mixture into balls. Transfer balls to a baking sheet in desired size and flatten slightly to form patties.

Heat 2 tbsp of extra virgin olive oil in a large frying pan over a medium-high heat. Fry chickpea patties for 3 minutes on each side, until golden.

Serve the chickpea fritters with spinach, chopped avocado, hummus and a fried egg (optional).
